Blue Cheese Waldorf with Jacket Potato

A delicious light lunch that’s even quicker with a microwave!

10-15 mins (microwave) or 50 mins (Oven)

Ingredients:

  • 4 medium baking potatoes, scrubbed and washed
  • 1 celery heart, cut into 1cm pieces
  • 2 crisp eating apples, peeled cored and diced into 1cm pieces
  • 50g shelled walnuts, broken into 1cm pieces
  • 50g blue cheese cut into 1cm chunks
  • 125ml mayonnaise
  • Butter (optional)

Instructions

1. Bake (about 50 mins) or microwave (10-15 mins) the potatoes until soft.
2. Place the celery, apple, walnuts and cheese in a bowl with the mayonnaise and gently fold together until completely mixed.
3. Cut a cross in the top of each potato and squeeze the sides gently to open out. Tuck a pat of butter into the centre if required and top with the filling mixture.

Variations

Replace half the mayonnaise with yoghurt for a lighter dressing.
