Satay Dip and Celery Wedges

Ingredients:
- 2 celery hearts, rinsed
- 50g/2oz desiccated coconut
- 240ml/8fl oz hot water
- 5 tbsp crunchy peanut butter
- 1 tbsp light soy sauce
- 1 small clove garlic, crushed
- 1-2 fresh green chillies, seeded and finely chopped
- 1 tsp brown sugar
- 1 tbsp lime juice
Instructions
1 Put the coconut into a bowl, pour over hot water and leave to soak for 15 minutes.
2 Strain the mixture into a saucepan, pressing well to extract all the liquid. Discard the coconut.
3 Add the remaining ingredients and stir over a low heat until well blended.
4 Cut the celery lenthways into quarters.
