Spring Vegetable Stir-Fry

Ingredients:

  • 1 head of celery, rinsed, trimmed and cut into thick diagonal slices
  • 225g/8oz broccoli florets
  • 175g/6oz green beans, trimmed and cut in half
  • 1 green pepper, seeded and sliced
  • 1 clove garlic, crushed
  • 1" fresh ginger, peeled and finely chopped
  • 1 green chilli, seeded and finely chopped
  • 2 tbsp sunflower oil
  • 2 tbsp light soy sauce
  • 1 tbsp rice wine or dry sherry
  • 2 tsp sesame oil
  • 6 spring onions, trimmed and chopped

Instructions

1 Cut large broccoli florets in half or quarters and slice the stalk part. Plunge into a large pan of boiling water with the beans for 2 minutes. Rinse under cold water and drain well.

2 Heat a large deep frying pan or wok, add the sunflower oil, celery and green pepper and stir fry for 2 minutes. Add the broccoli and beans along with the garlic, ginger and fresh chilli. Continue to stir fry for a further 3 minutes.

3 Add the soy sauce and rice wine or sherry. After 1 minute add the sesame oil and spring onions. Mix thoroughly.

4 Serve with Basmati rice or noodles
