Celery, Ham & Spring Onion-filled Pittas

Ingredients:

  • 100g sliced cooked ham cut into strips
  • 4 spring onions, cut into strips
  • 3 sticks of celery washed and cut into strips
  • 125ml natural thick yoghurt
  • 6-8 large fresh mint leaves, chopped
  • Salt & freshly ground black pepper
  • 4 wholemeal pitta breads, toasted lightly for 2-3 mins and split to form pockets
  • 1 Little Gem lettuce, washed and the leaves separated

Instructions

1 Lightly mix the ham, onions, celery, yoghurt and mint together in a large bowl and season to taste. 2 Open the pitta pockets and insert 2-3 leaves of Little Gem in each. 3 Spoon the filling in on top of the leaves so it can be still be seen, and serve.
