Celery, Tuna & Sweetcorn Salad
A quick fresh-tasting salad with great crunch for a light lunch. Serves 4 as a side salad.- Serves:

Ingredients:
- 1 185g-200g tin tuna in brine or spring water, drained and cut into chunks
- 1 celery heart, diagonally sliced into 1cm pieces
- 1 200g tin sweetcorn, drained
- 1 pack cherry tomatoes, halved
- for the dressing:
- 5tbsp sunflower or grapeseed oil
- Juice & zest of half a lemon
- 1 tsp Dijon mustard
- 1 tsp sugar
- Salt & fresh ground black pepper
Instructions
1 Put the celery, tuna, sweetcorn and tomatoes in a bowl.2 Whisk the dressing ingredients together and pour over the salad.3 Mix well and serve.
Alternatives
Make a light creamy dressing by mixing 6 tbsp Greek yoghurt with the zest and juice of half a lemon, and season to taste.
