Celery Stuffing

A vegetarian-friendly stuffing that goes well with chicken or turkey.

6-8
Preparation Time:
10 minutes
Cooking Time:
20 minutes, plus roasting with the bird

Ingredients:

125g butter

250g chopped onion

250g chopped celery

350g white breadcrumbs

Zest & juice of 1 lemon

3 tablespoons chopped parsley

1 tablespoon chopped thyme (preferably fresh)

2 small eggs

Instructions

Melt the butter in a frying pan and add the onion and celery. Cook over a low heat to soften (without browning) for 20 mins. Allow to cool slightly and mix in the remaining ingredients.

Lightly stuff the neck of the turkey (the mixture will swell during cooking).

 

Alternatives

If you like garlic, add a crushed clove or two while cooking the onion and celery.

You can also add a handful of pine-nuts or chopped hazelnuts at the pre-cooking stage.

Replace the lemon juice (still add the zest) with a couple of tablespoons of sherry for a more festive flavour.
