Celery & Pine Nuts

Ingredients:

  • 1 medium head of celery, washed
  • 1 small onion, chopped
  • 115g pine nuts, lightly toasted
  • 50g butter
  • Salt & freshly ground black pepper
  • Small bunch of parsley, chopped

Instructions

1. Cut the celery on the diagonal into pieces about 2.5cm (1") long.

2. Melt the butter in a saucepan and add the onions and celery.

3. Cover and cook over a low heat, shaking the pan occasionally, for 15 minutes until the celery is becoming tender.

4. Stir in the pine nuts to warm through, season to taste and serve immediately.

Alternatives
Use 2 tablespoons of olive oil instead of the butter.
Instead of parsley, try other fresh herbs like thyme or oregano - this is an Italian dish so it goes well with Mediterranean flavours.
