Celery & Apple Soup

Ingredients:

  • 30g butter
  • 1 medium onion, peeled and finely chopped
  • 1 medium potato, peeled and diced
  • 6 celery stalks, finely sliced - reserve some leaves for garnish
  • 1 litre light vegetable stock
  • Salt & freshly ground black pepper
  • 2 eating apples, peeled cored & diced (do this just before you use them)
  • 150ml single cream

Instructions

1. Melt the butter in a large saucepan and gently fry the onion, without browning, for 5 minutes.

2. Add the celery, potato and stock and season to taste. 3. Bring to the boil and simmer for 10 minutes.

4. Stir in the apples and cook for a further 10 minutes. 5. Blend in a processor, or in the pan with a stick blender, until smooth. Return to the pan, stir in the cream and heat through.

6. Serve warm garnished with chopped celery leaves.

Alternatives
Use Greek-style yoghurt instead of the cream.
