Celery & Stilton Soup

Lots of good soups can be made with celery - this is a favourite that's quick and easy to do.

Ingredients:

  • 1 head celery, washed and finely chopped
  • 2 medium onions, chopped
  • 50g butter
  • 30 g plain flour
  • 1ltre chicken or vegetable stock
  • Salt and freshly ground black pepper
  • 60g Stilton cheese, well mashed with a fork
  • 1 tbsp chopped parsley

Instructions

1 Gently cook the celery and onions in the butter in a large saucepan for 5 - 6 minutes, without browning.

2 Stir in the flour and cook for a further 2 minutes before stirring in the stock. Add salt and pepper to taste, then cover and simmer for 30 minutes until the celery is tender.

3 Remove from the heat and put the soup through a blender.

4 Return the soup to the pan and reheat. Whisk the mashed cheese into the liquid. Adjust the seasoning and serve sprinkled with the parsley.
