Chicken, Bacon & Celery Tartlets

This delicious recipe makes a perfect starter or light lunch - simple to prepare and no pasty needed!

Ingredients:

  • 8 thin slices of bread, crusts removed
  • 50g melted butter
  • 25g butter
  • 1 celery heart, finely sliced
  • 2 rindless smoked bacon rashers, finely chopped
  • 125g skinless chicken breast, diced
  • 1 tbsp sherry
  • 3 tbsp crème fraîche
  • 1 tbsp chopped fresh parsley
  • Salt & freshly ground black pepper
  • Rocket or watercress salad to serve.

Instructions

1 Preheat the oven to 200C/400F/Gas 6. Brush both sides of the bread with the melted butter and press firmly into 8 tartlet tins, and bake in the oven for 10-15 minutes until golden.

2 Meanwhile, melt the 25g of butter in a small saucepan and gently fry the celery for 5 minutes until softened. Add the bacon and chicken and cook for a further 5 minutes.

3 Stir in the sherry and allow to bubble briefly, then stir in the cream and parsley, adding salt and pepper to taste, and cook for a further few minutes until the mixture forms a creamy sauce.

4 Fill each bread case with the sauce and arrange on individual plates with the salad leaves. Serve hot.
