Celery & Pine Nuts

A classic Italian dish, very quick to prepare.

Ingredients:

  • 1 large head of celery, washed and cut into 1" pieces
  • 1 small onion, finely chopped
  • 115g pine nuts
  • 50g butter
  • Salt & fresh ground black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

1 Melt the butter in a saucepan and add the celery and onion. Cover and cook, shaking occasionally, over a low heat for 15 minutes until the celery is becoming tender.

2 Stir in the pine nuts, add salt and pepper to taste and serve immediately.
