Crunchy Summer Salad

Ingredients:

  • 2 celery hearts, rinsed
  • 2 hearts romaine lettuce
  • 130g diced pancetta or bacon lardons
  • For the dressing:
  • 200 ml tub crème fraîche
  • 2 tbsp chopped parsley
  • 2 tbsp snipped chives
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper

Instructions

1. Tear or chop the lettuce and slice the celery into 2.5cm/1" pieces. Share between 4 serving bowls.

2. Put the pancetta into a warmed frying pan and cook over a medium heat for about 5 mins, stirring until the bacon is golden. Drain on kitchen paper.

3. Mix the ingredients for the dressing together and season, Spoon over the salad and scatter the bacon over the top. Serve immediately.
