Celery, Pear & Walnut Salad with Blue Cheese Dressing

Ingredients:

  • 2 celery hearts, rinsed
  • 2 ripe pears - Williams or Rocha
  • 2 heads chicory
  • 40g/11/2 oz walnut pieces
  • For the dressing:
  • 75g/3oz Dolcelatte cheese
  • 150g /5oz fat free fromage frais
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Freshly ground black pepper

Instructions

1. Cut the celery hearts cross ways into thick slices and put into a bowl. Quarter the pears, remove the cores and cut across into slices; add to the celery. Cut the chicory across into thick slices and add to the salad.

 

2. Put the Dolcelette into a bowl and mash with a fork. Add the fromage frais, mustard, lemon juice, 2 tbsp warm water and season with black pepper. Whisk or beat until smooth - a hand held blender is useful if a very smooth dressing is preferred.

 

3. Scoop the dressing into the salad and toss together, place in serving dish or individual bowls and scatter the walnut pieces over the top.
