Potato Salad with Celery & Cherry Tomatoes

Ingredients:
- 350/12oz baby new potatoes, scrubbed
- 4 celery hearts, rinsed and sliced
- 175g/6oz cherry tomatoes, quartered
- 2 tbsp snipped chives
- Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- Freshly ground black pepper
Instructions
1. Put the potatoes in a pan with cold water, add a little salt and bring to the boil. Simmer for 15-20 minutes depending on size, until just tender.
2. Meanwhile put the dressing ingredients into a large bowl and whisk together.
3. Drain the potatoes. When cool enough to handle, halve or slice thickly. Add to the dressing toss together and leave to cool.
4. Add the celery, cherry tomatoes and chives to the potatoes. Fold together and serve at room temperature.
