Spicy Celery & Prawn Salad

Ingredients:
- 2 celery hearts, rinsed
- 1 large carrot, peeled
- 250g large peeled prawns
- 150g green beans, cut into 1" pieces
- Small bunch fresh coriander
- Dressing :
- 1 lime - grated rind and juice
- 5 tbsp olive oil
- 1 tsp Dijon mustard
- Pinch caster sugar
- Freshly ground black pepper
Instructions
1. Cut the celery hearts across into 1cm thick slices and put into a bowl.
2. Place the prawns on a kitchen paper to absorb any excess liquid and add to the salad.
3. With a potato peeler, shave short pieces of carrot. Plunge the carrot and green beans into boiling water and boil for 1 minute. Drain, rinse under cold water and drain again. Add to the salad.
4. Whisk the dressing ingredients together, drizzle over the salad and mix.
5. Cover and refrigerate until ready to serve. Just before serving finely shred the coriander and toss through the salad.
