Celery, Tuna & Sweetcorn Salad

A quick fresh-tasting salad with great crunch for a light lunch. Serves 4 as a side salad.

Ingredients:

  • 1 185g-200g tin tuna in brine or spring water, drained and cut into chunks
  • 1 celery heart, diagonally sliced into 1cm pieces
  • 1 200g tin sweetcorn, drained
  • 1 pack cherry tomatoes, halved
  • for the dressing:
  • 5tbsp sunflower or grapeseed oil
  • Juice & zest of half a lemon
  • 1 tsp Dijon mustard
  • 1 tsp sugar
  • Salt & fresh ground black pepper

Instructions

1 Put the celery, tuna, sweetcorn and tomatoes in a bowl.

2 Whisk the dressing ingredients together and pour over the salad.

3 Mix well and serve.
